sethu
sethu is a type of traditional rice cake that is popular in China. You can find it in many restaurants and bakeries around the world. Traditionally, this type of cake is made with white granulated sugar, eggs, milk, yeast, and flour. It is often sold in large quantities in Chinese bakeries.
I’m not a sethuan fan but I do like the way it looks, the sweetness, and the fact that you can make it from scratch. I can’t believe I’ve never tried making it. I can’t wait to try it. I’ll have to go check out the recipe.
To prepare, place the bowl of egg whites in the bowl of rice flour and beat until the white is completely incorporated. Add the sugar and continue to beat until the sugar has dissolved. Add the milk and beat until you get a smooth batter. Add the yeast and stir until the yeast is dissolved. Pour the batter into the prepared pan and bake until the cake is cooked through (if you want, you can use a toothpick to check).
The best way to tell if your cake is cooked is to lift a corner of the cake off a toothpick and invert it onto a plate. If it comes off clean, it’s done. If you need a hint, it might be the top of the cake is slightly darker, or if you’re using a knife to peel back the cake, it might be browning.
You can also do a “bite test” by removing the toothpick and putting it into your mouth. If the toothpick comes out clean, then its done. If it doesn’t come out clean, its not.
If you want to know if your cake is done, you either need to cut it in half, or you need to keep moving it around a bit to see if it comes off nicely. I know it sounds weird, but there is a scientific method for doing this, and it really matters.
